Paula's Favorite Soup

For a while (a year) I subscribed to Paula Deen's magazine.  That entire year I only ever tried one recipe.  This is it....

Paula's Favorite Soup
aka "Italian Sausage Soup"
















Here's what you'll need:
1 (16 oz) sweet italian sausage
1 medium onion, diced
1 cup carrots, diced
1 cup celery, diced
3 (14 oz) cans beef broth
2 cans diced tomatoes with basil, oregano, and garlic
1 can dark red kidney beans
1 can light red kidney beans
1 can great northern kidney beans
2 cups ditalini pasta
1 tsp. salt
1 tsp. pepper

In a large pot or dutch oven cook onion, carrots, celery, and sausage over medium high heat until sausage is brown and crumbles.

Drain well

Stir in tomatoes, broth, and beans.  Bring to a boil over medium-high heat.

Reduce and simmer for 20 minutes.

Add pasta and continue to simmer for 8-10 minutes.

Add salt and pepper.

Dish it up and enjoy!
