Chicken Parmesan

Shoot.  I forgot to take pics.  I wrote this prior to making dinner and then totally forgot to take a pic of the finished product.  I did remember in the middle of cooking the chicken, but forgot again later.  You'll just have to use you imagination.  Or go here where I found the recipe.  Back to the regularly scheduled blog post...

I have managed to find another Italian meal that C likes.  In fact, when given 4 other dinner choices (all not Italian) he went with this one.  What's best is that it's supper easy.

Chicken Parmesan

Here's what you'll need:
2 eggs, beaten
1 cup grated parmesan cheese
1 cup seasoned bread crumbs
6 skinless, boneless chicken breasts
jar of pasta sauce
mozzarella cheese
1 Tbs. vegetable oil
pasta

Here's what you do:

Preheat oven to 375 degrees.

Pour eggs into a shallow bowl.  Combine Parmesan cheese and bread crumbs in another bowl.  Dip chicken into eggs then cheese/bread crumb mixture.

In large skillet, heat oil of medium heat. Add chicken and sauté for 8-10 minutes per side or until chicken is cooked through.

Pour tomato sauce into a 9x13 lightly greased pan.  Add chicken then place some monterey jack cheese over each piece.

Bake for 20 minutes or until melted.  Plate with (cooked) pasta and enjoy!
