Tacozagna

Thanks to Rachael Ray, you'll get your veggies in this recipe. Yes, it is one of her recipes written for kids and yes, I make it for just C and myself, but it is so yummy and easy (or at least easier than Rachael's grown-up version).

Here's what you need
2 1/2 lbs. ground beef or ground turkey (I tried turkey once, it tasted like turkey and that didn't fly in our house)
1 zucchini
2 carrots
1 onion
3 cloves of garlic
3 tbs chili powder
2 tsp ground cumin
1 tbs coriander
S&P
1 cup beef stock
6 (8 inch) flour tortillas
3 cups shredded cheese

Preheat oven to 400 degrees

Brown meat over medium heat for five minutes.  Add grated carrots, zucchini,  and onion.  Also add garlic.  Season with chili, cumin, coriander, salt and pepper and cook for 7-8 minutes.  Stir in the beef stock.

Grease a 9x13 pan.  Layer three overlapping tortillas and top with 1/3 meat and 1/3 cheese.  Repeat two more times.

Bake for 10-12 minutes to melt the cheese.
