yummy. yummy. fortune cookies.

Last week my sister and brother asked me to make some fortune cookies.  So I did. 
















These were Valentine's Day themed with BIG heart sprinkles (last bottle of Valentine's Day sprinkles in Kroger, but that's what happens when you shop for them three days before the big day) and lovey dovey fortunes.




Fortune Cookies



Here's what you need

1/2 c. flour
1/2 c. sugar
1 tsp. vanilla (or 1/2 tsp vanilla, 1/2 tsp almond)
2 egg whites

And here's what you do

Place all ingredients in a food processor and blend until super smooth (no lumps). Place in a container and chill for 1 hour.

Preheat oven to 400 degrees (does anyone know how to add that little degree symbol in blogger?).

Draw 3-4 (3 inch) circles on a piece of parchment paper.  If you're going to use the parchment, flip it over so you don't get any ink or lead in your cookies.  If you want to make them like I did (and I know everyone does) cut out the circles and place them under your silpat.  Lightly grease your parchment or silpat with some cooking spray.

Spoon 1 tsp. of batter into the center of each circle.  Spread evenly to fill the circle.

Bake for 5-6 minutes until edges are ever so slightly brown.

Remove from oven and use a metal spatula to loosen the edges. Remove cookie and place upside down on whatever folding surface you are using.  Then place the fortune in the middle of the cookie. Fold the cookie so the edges meet (like a semi-circle) and press edges together.  Gently pull the ends of the cookie down over the rim of a bowl or cup.  Repeat until all the cookies are made.  This should make roughly 24 cookies.

Then dip the cookies into the chocolate of your choice.  Or no chocolate at all.  But the white chocolate is super good.

You can do plain...

Or you can dip them in white chocolate (which is the best)...
